Succulent Mini Cupcakes

Succulents are beautiful to look at and fun to grow. Now they are super cute and fun to eat!

Who loves succulents? I know I do and they are all the rage right now! Not only can you find them at Trader Joe’s for only $1.99, you can also find fake succulent plants at various stores (including Dollar Tree) for cute and easy decorations. Succulents come in a wide variety of shapes, colors and sizes. I think that’s why I am drawn to them. Some succulents are easier to grow indoors than others but again, if you don’t have much of a green thumb consider a few fake succulents instead!

I was walking through Hobby Lobby a few weeks ago and hit the baking aisle. Usually when I hit the baking aisle at various craft stores I don’t have anything specific in mind but when I saw these adorable small succulent icings I couldn’t help but grab a package. I wasn’t exactly sure what I’d do with them but they were too cute to resist.

After I brought them home I decided they look perfect on top of mini frosted cupcakes. I love chocolate but you could totally use whatever flavor you prefer and box mix works great! Grab that box of cake mix and let’s get started!

Mini Succulent Cupcakes

Ingredients:

Directions:

  1. Preheat the oven to 350 degrees and line your mine cupcake tin with cupcake liners.
  2. Prepare the bake mix as directed.
  3. Fill each mini cupcake well about 1/2 full.
  4. Bake 12-14 minutes.
  5. Remove from the oven and let cool completely.
  6. Attach the small round frosting tip to the disposable piping bag and fill with frosting.
  7. Gently squeeze the frosting from the bag and frost each cupcake in a circular motion.
  8. Repeat with all mini cupcakes.
  9. Place 1 small succulent on top of each frosted cupcake.
  10. Repeat with all cupcakes.

*Makes approximately 48 succulent mini cupcakes
